I really love ginger ale.
Faster Ginger AleOr just dream about it until you can figure out somehow to enjoy it without any sugar in it.
Bring 2 cups of water to a rolling boil in a saucepan. Add 3/4 cup finely chopped ginger. Reduce heat to simmer for 10 minutes. Let cool for 30 minutes. Strain out liquid with a fine mesh strainer, discarding ginger.
Bring 1 cup water to a boil in a separate saucepan. Dissolve the sugar in the boiling water. Let cool.
Mix ginger water with simple syrup. Add club soda and fresh lime juice to taste.
